apple & raspberry overnight oats

Sweet, fresh apple with bursts of juicy raspberries together with a creamy oats. This is a wonderful flavour combination for your next breakfast. May I just point out how pretty in pink the oats is though?


There are so many different overnight oats combinations, and this one is especially great for those who do not like banana. This breakfast is light and fresh, with bursts of sweet raspberries and pomegranate seeds (if using).





THIS BREAKFAST IS MADE WITH
  • whole rolled oats, preferably organic

  • cashew or oat milk, or milk of choice

  • plant-based yoghurt, unflavoured

  • a fresh apple, I left the skin on but feel to peel the apple

  • a few raspberries, fresh or frozen

  • ground cinnamon

  • pomegranate seeds, fresh or frozen

  • dried cranberries (optional)

  • raw cashew nuts


PRETTY IN PINK

Both fresh or frozen raspberries will work in this recipe. Fresh raspberries are my preferred option , but they are not available all year around and therefor not always cheap, if even available in the fresh fruit section.


When possible, buy them when in season and better yet local.


To make this oats look even prettier I roughly mashed to raspberries with a fork before mixing them in with the rest of the ingredients. You can skip this step and keep them whole if you prefer.





THIS BREAKFAST IS
  • healthy

  • sugar-free

  • fruit sweetened only

  • for nut-free option use oat or pea milk

  • for gluten-free option make sure to use a gluten-free specified oats

  • it is also filling

  • satisfying

  • fresh

  • creamy

  • delicious

  • and oh so pretty!


To keep the recipe sugar-free, I used the fruit to sweeten the oats.

If you do however like your breakfast on the sweet side or the apples you are using are a bit tart, you can add 1/2 tablespoon maple or date syrup to the oats. Try to avoid adding granular cane sugar.

APPLE & RASPBERRY OVERNIGHT OATS

Serves: 2

Prep time: 5 min

Time: 5 min prep plus overnight soaking



INGREDIENTS
  • 80g rolled oats

  • 1/2 cup fresh or frozen raspberries, or more if you like

  • 1 apple, grated

  • 1 cup oat or cashew milk (unsweetened)

  • 2 tbsp plant-base yoghurt

  • 2 tbsp cashew nuts (unsalted)

  • 1/2 tsp ground cinnamon

  • 2 tbsp cranberries or pomegranate seeds, or both

  • pinch of salt

  • 1 tbsp maple syrup (optional - if you like your breakfast on the sweeter side)



INSTRUCTIONS
  1. (Optional) Lightly mash the raspberries if you like to give it that pretty pink colour.

  2. Add all the ingredients into a bowl and mix until well combined.

  3. When ready to eat add more yoghurt or milk if needed.

  4. To serve sprinkle with homemade granola or quinoa puffs or more berries.
