Banana bread inspired granola clusters. These clusters are so good, you will be snacking on them all day.

THIS GRANOLA IS

  • crunchy

  • fruity

  • dessert inspired

  • refined sugar free

  • better than store-bought granola



TO MAKE THIS YOU WILL NEED

  • old-fashioned rolled oats, gluten-free if required

  • a ripe banana

  • cold pressed, virgin coconut oil

  • real maple syrup

  • ground cinnamon

  • chopped, raw pecan nuts

  • dried banana pieces (optional)

  • and a pinch of fine sea salt to balance the flavours

WHY YOU SHOULD MAKE YOUR OWN GRANOLA

Most store-bought granolas are high in refined sugars and might contain palm oils.

When making your own, you can control the amount of sugar and the ingredients. Add ingredients such as nuts and seeds to boost the nutrition intake.

Plus, it is easier than you might think and takes less than an hour to make.


This granola makes a wonderful breakfast or snack and even makes a great homemade gift.



ADDITIONAL ADD-INS

Pumpkin seeds and sunflower seeds

Replace the pecans with walnuts or macadamia nuts.

I use real maple syrup in this recipes, but you can easily replace it with honey (if honey is something you consume).


TIPS!

Make sure to line the baking tray with parchment paper or use a baking sheet.

If you want clusters, gently press down the granola with a spatula before baking in the oven and let the granola cool completely before breaking it up.

BANANA BREAD GRANOLA

INGREDIENTS

  • 1 1/2 cup old fashioned rolled oats

  • 1 small very ripe banana

  • 2 tbsp coconut oil, melted

  • 2 tbsp maple syrup

  • 1 tsp ground cinnamon

  • pinch of nutmeg (optional)

  • 2 tbsp chopped pecan nuts

  • and a pinch of salt


ADDTIONAL (optional to add after baking)

  • dried banana pieces, roughly chopped

  • dark chocolate chips



INSTRUCTIONS

  1. Preheat the oven to 180C

  2. In a mixing bowl, mash the banana and add the rest of the ingredients. Mix well.

  3. Spread the granola mixture evenly on a baking tray and gently press down on the mixture as this will help from the clusters.

  4. Place in the preheated oven and bake for about 25 - 30 minutes or until golden.

  5. OPTIONAL once the granola is out of the oven sprinkle with dried banana pieces and dark chocolate chips.

  6. Once cooled, store in an airtight container.
