A cooling and refreshing condiment. This vegan tzatziki is rich, creamy and delicious with vegan gyros, veggies, baked potatoes, and more!

WHAT IS TZATZIKI?
Tzatziki is a traditional Greek side dish made of a thick yoghurt, olive oil, garlic, grated and drained cucumber, fresh lemon juice, fresh herbs (usually dill or mint) and salt.
It is enjoyed as a dip, sauce or a spread.
HOW TO SERVE AND ENJOY TZATZIKI
Sauce for falafel
Sauce for vegan gyros or vegan souvlaki
As a dip with bread
As a dip for roasted or fresh veggies
On a vegan burger or sandwich
In a pita wrap
As a topping on a baked potato

HELPFUL TIPS!
Use a thick, plain yoghurt. I recommend using a plant-based Greek- style yoghurt. The thicker, the better.
After grating the cucumber, squeeze out the access water as the water will make the sauce runny and might separate the sauce.
Use fresh lemon juice and not bottled lemon juice
I recommend using fresh dill, but dried dill works well too.

VEGAN TZATZIKI

INGREDIENTS
150g plantbased Greek-style yoghurt
1/2 small cucumber, grated about 90g
1 tbsp chopped fresh dill
1 - 2 tbsp fresh lemon juice
1 tsp fresh chopped mint
1 - 2 garlic cloves, crushed
1/4 tsp salt, or more to taste
pepper, to taste
INSTRUCTIONS
Grate the cucumber and squeeze the grated cucumber to drain all access water.
Mix the grated cucumber and all the rest of the ingredients in a small bowl until well combined.
Taste and adjust seasoning as needed.
