Dark quinoa salad with roasted courgette, fresh green vegetables and a lemony dressing. This salad makes a delicious quick lunch or light dinner.

TO MAKE THIS YOU WILL NEED

  • Cooked quinoa, light or dark

  • Roasted courgette/ zucchini

  • Edamame beans

  • Green peas

  • Avocado

  • Rocket/Arugula

  • Cucumber

  • Pistachios

  • pickled red onions (optional)

  • and a delicious dressing.



MEAL PREP

You can cook the quinoa and roast the courgette on your meal prep days to save you time making this salad.

Let everything cool and store them in the fridge in an airtight container.



ALTERNATIVES

Replace the courgette with other vegetables such as aubergine, peppers or even butternut.

Substitute the pistachios with pumpkin seeds, pine nuts or walnuts.

Replace the rocket with massaged kale or baby leaf spinach

Add crispy tofu croutons

Replace the lemony dressing with a tahini dressing.

Sprinkle with vegan feta alternative.



SERVE THIS...

As a side salad to a BBQ or as a main.

GREEN QUINOA SALAD


A dark quinoa salad with roasted courgette, fresh green vegetables and a lemony dressing.


SERVES 1

TIME: 5 minutes



INGREDIENTS

FOR THE SALAD

  • 1/2 - 3/4 cup cooked quinoa, dark or light (add to your liking)

  • 1 cup roasted courgette pieces

  • 1/4 cup edamame beans/peas

  • 1/4 cup fresh or pickled cucumber, cubed

  • 2 - 3 tbsp chopped pistachios

  • 1 large handful wild rocket (arugula)

  • fresh chopped herbs, such as parsley or basil

  • 1/4 - 1/2 avocado, cubed

  • To serve (optional) pickled red onions



FOR THE DRESSING

  • 1/4 cup fresh lemon juice

  • 1 garlic clove grated or crushed

  • 1 teaspoon Dijon or wholegrain mustard

  • 1/4 teaspoon sea salt , more to taste

  • Crushed black pepper to taste

  • 1/2 teaspoon maple syrup or honey (optional)

  • 2 - 3 tbsp extra virgin olive oil

  • 1/2 teaspoon fresh or dried thyme or parsley (optional)



INSTRUCTIONS

  1. First make the dressing by adding all the ingredients into a small jar. Seal with a lid and shake to mix well.

  2. Taste and adjust seasoning as needed. Set aside.

  3. To assemble the salad add all the salad ingredients (excluding the onion) into a bowl. Start by only adding 1/3 of the dressing. Mix well, taste and add more dressing as needed.

  4. Top with a few pickled red onions (optional) and enjoy.
