Healthy Snickers Date Bites

Delicious and healthy snickers inspired treat, made with dates, peanut butter and dark chocolate.


Meet your new favourite snack. These stuffed dates taste simply divine and are healthier than Snickers bars. In my opinion they taste even better than an actual Snickers bar.


Healthy Snickers date bites


TO MAKE THESE YOU NEED


MEDJOOL DATES

Medjool dates work best as they are bigger than most dates and keep their shape better. Plus, they taste like a chewy caramel.


PEANUT BUTTER

Make sure to use a peanut butter without any added oils or sugars. I personally prefer using a crunchy peanut butter but you can use a smooth peanut butter if you like.


DARK CHOCOLATE

70% or higher (vegan) dark chocolate chunks or vegan chocolate chips to coat the dates. This is optional.


COCONUT OIL

This helps make the melted chocolate a bit thinner which makes it easier to cover the dates. You can skip the coconut oil, but the melted chocolate will be pretty thick. This is optional.




EASY TO MAKE

Simply cut into the date to remove the pit. Fill with peanut butter and place in the freezer for about 20 minutes (this step is optional).

Melt dark chocolate with a bit of coconut oil and cover the frozen dates in chocolate.

Enjoy!

I always keep mine in the freezer. I love how the dates tastes like chewy toffee or caramel when they are frozen.

ARE DATES HEALTHY?

Yes! Thankfully yes! They do of course contain natural sugar, but they have a low glycemic index score as they contain a good amount of fiber. Not only are they low in fat, but also packed with nutrients.



SNACK YEAH

This makes a wonderful healthier snack if you are trying to cut back on your sugar intake but craving something sweet.

To reduce the sugar intake even more, you can drizzle the dates with only a little bit of the melted chocolate (instead of fully covered) or omit the chocolate completely. The peanut butter stuffed dates will still taste fabulous!!



ALTERNATIVE OPIONS
  • For a nut-free option use a seed butter.

  • Replace the peanut butter with any nut butter you like.

  • Sprinkle the chocolate covered date with extra chopped peanuts for more crunch.

  • Replace the dark chocolate with vegan milk or vegan white chocolate.

HEALTHY SNICKERS DATE BITES

Makes: 10 dates

Time: 10 minutes, plus optional time in the freezer




INGREDIENTS

  • 10 Medjool dates

  • 2 - 3 tbsp crunchy peanut butter

  • 1/2 cup dairy-free dark chocolate (chips or chunks)

  • 1 tsp coconut oil



INSTRUCTIONS

  1. Carefully cut a slit in each date and remove the pit.

  2. Fill each date with peanut butter.

  3. Optional: Place the stuffed dates in the freezer for about 20 minutes, this will make it easier to coat the dates.

  4. Melt the chocolate with the coconut oil and stir to combine, until completely smooth.

  5. Dip each date in the melted chocolate or drizzle with chocolate if you want to use less chocolate.

  6. Pop the dates in the fridge or freezer until the chocolate is set. Enjoy!
