Healthy Strawberry + Chocolate Brownie Bites

Bite-size, no-bake brownie bites made with healthy ingredients and are ready in about 10 minutes. Made with a only a few ingredients, these strawberry & chocolate bites are raw, date sweetened and make a healthy, delicious snack.

HERE IS WHAT YOU WILL NEED
PECANS*
Pecans are rich in nutrients, including healthy fats, protein, minerals and vitamins. They can support blood sugar regulations, digestive and heart health and promote a healthy skin.
*Substitute the pecan nuts for walnuts. I suggest soaking them in hot water for about 15 minutes beforehand and draining them before blending.
ALMONDS
I used ground almonds, but you can also use raw almonds and blend them into a ground floury consistency before adding them to the rest of the ingredients.
Almonds are a great source of calcium. They are great for your skin and can also aid weight loss.
TAHINI
Tahini may help support hormone balance. Tahini is also rich in healthy fats, rich in antioxidants and is a great source of calcium and magnesium. It is said that it may contribute to strengthen our central nervous system.
CACAO POWDER
This adds the chocolate bit to the brownie bites. Cacao is a good source of potassium and iron, as well as protein and fibre. Due to being rich in monounsaturated fats, it can help keep your heart healthy.
MEDJOOL DATES
This is another ingredient that can help improve hormone regulation. They are a good source of energy and are also full of antioxidants.
CHOCOLATE CHIPS (Optional)
A few dark chocolate chips will make these extra indulgent.
FREEZE DRIED STRAWBERRIES
They provide that intense, tart strawberry flavour to these delicious bites.
AND A PINCH OF SEA SALT
To balance the flavours.

HOW TO MAKE HEALTHY BROWNIE BITES
Pulse the pecan nuts (or walnuts) and almonds in a food processor into a rough crumb.
Add the remaining ingredients and blend until well combined and forms a sticky crumb.
Remove the mixture from the blender, mix in the chocolate chips (if using) and roll into 12 even individual balls.
Roll each ball in the freeze-dried strawberry pieces or freeze-dried strawberry dust.
Transfer them to an airtight container and let them chill in the fridge for a bit to firm up.
TOO STICKY
If the mixture feels too sticky, you can always add more cacao powder. The date bites will however still firm up as the cacao powder will absorb some of the moisture, so don't add too much additional cacao.
TOO CRUMBLY
Depending on the softness/ freshness of the dates using, you might have to add a bit of water or almond milk to make it easier to shape into balls. Only add a little bit at a time.

MAKES: about 12 bite-size balls
TIME: 10 minutes (excludes optional soaking of walnuts and chilling time)
INGREDIENTS
25g raw pecan nuts
35g raw almonds
2 tbsp cacao powder
1 tsp vanilla extract
1 generous tbsp runny tahini
7 large Medjool dates
a pinch of sea salt
1.5 tbsp dark chocolate chips
freeze-dried strawberry pieces/dust
Almond milk, as needed
INSTRUCTIONS
Pulse the pecans and almonds in a food processor into a rough crumb.
Add the remaining ingredients and blend until well combined and a sticky crumbs forms. It should stick together when pressing the mixture between your fingers.
If the mixture is too crumbly, add a tablespoon of almond milk (add only if needed) and blend again.
Remove the mixture from the blender and stir in the chocolate chips. Mix well to evenly distribute the chocolate chips. Divide the mixture into 12 and roll into even bite-size balls.
Roll each ball in the freeze-dried strawberry pieces or freeze-dried strawberry dust.
Store them to an airtight container and let them chill in the fridge for a bit to firm up.
