High-Protein Green Goddess Salad

A creamy, fresh and high protein dressing with fresh greens. This salad is a wonderful addition to your summer menu. It's high in antioxidants and has anti-inflammatory benefits. Say hello to beautiful skin.

This salad has it all. Healthy fats from the avocado and seeds. Protein from the tofu. Fibre and nutrients from the cabbage and lettuce. Even more nutrients from the herbs. Plus, this is a great way to use up any left-over herbs, leavy greens or the imperfect Avocado.
HIGH PROTEIN
We all know how social media is all about eating protein with every meal at the moment.
The green dressing is high in protein as already mentioned due to the tofu. The tofu also gives it that rich, creamy flavour and texture.
HIGH IN FIBER
Although I can agree that protein does keep you feel fuller and helps with cravings, fiber is extremely important too for a healthy gut. This salad is high in fiber, which helps you feel full so you don't feel like you need to eat too much.

FOR THE SAUCE YOU WILL NEED
Spring onions
A block of silken tofu
Fresh herbs
Nutritional Yeast
Miso Paste
Avocado
A fresh lemon
Garlic
Salt & Pepper
FOR THE SALAD
Baby gem lettuce, cabbage and a cucumber. Finished with toasted pumpkin seeds and crushed walnuts.
I would suggest using leavy greens that are firmer in texture to avoid the salad tasting "soggy". Delicate lettuce such as butter lettuce or iceberg will be too soft. Other greens such as cos or romaine lettuce are also good to use.

SERVE WITH SOME CRUNCH
Here are a few ideas to add some additional crunch by sprinkling with one or some of these.
Toasted seeds and nuts
Toasted and salted almonds
Crushed Walnuts
Crispy bread crumbs or croutons
or mushroom "bacon"

TIME: 25 minutes
SERVES: 2 - 3
INGREDIENTS
FOR THE SAUCE
3-4 spring onions
a block of silken tofu
30g fresh herbs ( I used a mixture of chives, dill, parsley and basil )
30g fresh herbs
1 heaped tbsp nutritional yeast
1 tsp light miso paste
1/2 medium avocado
Juice from 1/2 large lemon
1 - 2 cloves of garlic
Sea salt and black pepper to taste
FOR THE SALAD
1 head baby gems
1/4 small white cabbage
1 medium sized cucumber
1/2 avocado, cubed
INSTRUCTIONS
Add all the sauce ingredients to a high-speed blender and blend util completely smooth. Taste and adjust seasoning as needed.
Chop or shred the gems and cabbage into small pieces. Transfer to a big serving bowl.
Chop or dice the cucumber and add that to the salad.
Pour 3/4 of the green dressing over the leaves and mix well to combine. Add more dressing as needed. If you have too much dressing you can always add more leaves to make a bigger salad.
Sprinkle with seeds and nuts or topping of choice and the other half of the avocado.
