High-protein lentil wraps


TWO INGREDIENTS

These are made with two ingredients only: red lentils and water.

These tiny legumes (or pulses) are packed with numerous nutrients.

Rich in folate, fibre and potassium, lentils are also a good source of iron and vitamin B1.



THESE WRAPS ARE

  • soft

  • pliable

  • high in plant protein

  • low in fat

  • easy to make

  • grain-free

  • gluten-free

  • nut-free

  • vegan



HOW TO MAKE THESE

It's as simple as rinsing and draining the red lentils, let them soak overnight in water and blending the lentils and soaking water into a batter. Fry in batches as you would crepes or pancakes and serve with trimmings and fillings of your choice.

WHY SOAK THE LENTILS

Soaking the lentils softens them and makes them easier to blend.



DELICIOUS WITH

  • pineapple salsa, roasted spicy cauliflower, guacamole and fresh salad (as in my photos)

  • hummus and roasted vegetables

  • Ethiopian berbere-spiced lentils and collard greens (my favourite combo!) I will try to post the recipe for these soon.



LEFT-OVER LENTIL WRAPS?

Store left-over wraps in an airtight container in the fridge for 2 - 3 days.



Two ingredient lentil wraps


LENTIL TORTILLA WRAPS


High-protein soft and pliable tortilla wraps, made with just lentils and water. Making wraps from scratch could not be any easier.


Serves: makes about 6 - 8 wraps (depending on the size you want)

Time: 20 minutes, plus overnight soaking time



INGREDIENTS

  • 1/2 cup dry red lentils

  • 1 cup water

  • pinch of salt (optional, but recommended)



INSTRUCTIONS

  1. Rinse the lentils with cold water until the water runs clear.

  2. Drain the lentils and transfer into container.

  3. Pour over the cup of water and let it sit in the fridge overnight or for a minimum of 3 hours.

  4. Do not drain the water from the lentils. Transfer the lentils with the soaking water into a highspeed blender, along with a pinch of salt, and blend until completely smooth.

  5. Heat a non stick pan and pour the batter in. Twirl the pan to spread out the batter to make it thinner or use the back of a spoon to spread the batter into an thin disk.

  6. Cook for about 2 minutes on each side.

  7. Repeat with the rest of the batter.

  8. Enjoy with your favourite toppings or fillings.
