Sweet, earthy and comforting. This superfoods latte is made with matcha, mesquite and sweetened with a little bit of maple syrup.

It is officially cosy sweater weather in the UK. Since the end of summer it has been raining probably 90 percent of the time here in Cornwall. I don't mind rainy and colder days, but a little bit of sunshine would also be welcomed.
In my opinion this matcha mesquite latte is comforting and perfect on the rainy, colder days.
MESQUITE
If you are not familiar with mesquite, this is a white carob powder. Carob is often used as a substitute for chocolate. So think of this as a white chocolate alternative. Mesquite is sweet, but not white chocolate sweet.
MATCHA
Make sure to use a good quality matcha powder. The first time I had matcha I did not like it. Perhaps I used a bit too much matcha powder, but I believe it might have been that the matcha used was of a poorer quality.
I have since found a wonderful brand called Avantcha, which has now turned me into a regular matcha drinker.

SWEETENER
I personally like my matcha sweet. Maple syrup or honey are a great way to add sweetness. Alternatively you can blend a Medjool date or two with the oat milk to sweeten the drink. Do this using a high-speed blender until completely smooth and has no date pieces.
OAT MILK
My choice of milk in lattes is oat milk, however you can also use almond, coconut or any milk of choice.

Use a (matcha) whisk or milk frother to dissolve the matcha and mesquite in about 1/4 cup hot water.
In the meantime heat the oat milk and maple syrup until hot but make sure it's not burning. Use a milk frother if desired for frothy milk.
Pour matcha mixture into a mug or glass (if not mixed in the mug). Carefully pour the hot milk over matcha mixture.
