WHAT IS MELKTERT?

Melktert (known as milk tart in English) is a traditional South African dessert made with a biscuit or pastry base, a milk-based custard filling and dusted with ground cinnamon.

It is rich, creamy and light, with a warming hint of cinnamon spice.


I used these flavours as inspiration for this breakfast.



A dessert inspired breakfast....





YOU WILL NEED

  • raw buckwheat groats

  • ground cinnamon

  • ground nutmeg

  • vanilla paste

  • vanilla protein powder, unsweetened

  • plantbased plain yoghurt

  • maple syrup



AND TO SERVE

  • your favourite granola, preferably homemade

  • ground cinnamon



YOU WILL ALSO NEED

  • a highspeed blender or food processor

  • serving bowl

  • a sieve for rinsing and draining the buckwheat groats



Healthier Melktert alternative


EASY AS PIE

Soak the buckwheat overnight in cold water.

When ready to serve simply drain and rinse the buckwheat and add all the filling ingredients into a blender. Blend until smooth.

Pour over granola, dust with cinnamon and enjoy!



SOAKING THE BUCKWHEAT

The reason for soaking the buckwheat is to soften the buckwheat which helps to digest them easier and helps get that smooth consistency when blending.



ALTERNATIVE OPTIONS

  • If you don't have vanilla protein powder, do not worry. Simply add more vanilla paste if you want to more stronger vanilla flavour.

  • Add more yoghurt if the mixture is too thick.

Serves: 1

Prep time: 5 min, plus overnight soaking




INGREDIENTS

FOR THE BUCKWHEAT PORRIDGE

  • 1/2 cup raw buckwheat groats, soaked overnight

  • 1/4 tsp ground nutmeg

  • 1/2 scoop vanilla protein powder, unsweetened

  • 1/2 tsp vanilla paste

  • 1 tbsp maple syrup

  • 1 - 2 tbsp vegan plain yoghurt, unsweetened


TO SERVE

  • granola of your choice

  • ground cinnamon



INSTRUCTIONS

Drain and rinse the soaked buckwheat.

Add all the ingredients for the porridge to a high-speed blender and blend until completely smooth.

Taste and adjust as needed. Add more yoghurt if the mixture is too thick.

Add a layer of granola to your serving bowl and pour over the porridge mixture

Finish with a generous dusting of ground cinnamon.

Enjoy!
