A fresh & sweet chia dessert, perfect as a dessert, snack or breakfast.
Orange and vanilla is one of those great flavour combinations that just seem to work in almost anything sweet.
The first time I had this flavour combo was when I lived in Germany (many years ago!) and the supermarket close to my house sold an orange & vanilla rooibos tea. I was instantly intrigued and made a cup as soon as I got home. I am not generally a fruity-tea person, but there was something very satisfying and comforting about the flavours that it became my go-to tea whenever I felt like a comforting hot drink.
It has been years since I have had this tea or even thought about it, but as I was working on a new granola recipe on the weekend that memory just popped into my mind.
This inspired me to use this flavour combination to make a quick and super easy chia pudding.

CHIA SEEDS
Chia seeds are classified as a superfood and are packed with healthy benefits such as high in antioxidants, omega 3, fiber and protein.

ORANGE
Seasonally oranges are best as they have the best flavour.
To get the max amount of flavour in the chia pudding add orange zest to the mixture and orange segments.

ORANGE & VANILLA CHIA PUDDING
A quick, easy and healthy dessert.
Serves 1 - 2
Time: 5 min, plus time to set
INGREDIENTS
30g chia seeds
1/2 tsp orange zest (optional)
juice from 1/2 orange (about 40 ml)
60ml almond milk or milk of choice
80g Greek-style plain soy or oat yoghurt
1 tbsp maple syrup or agave syrup
1 tsp vanilla extract
TO SERVE
segments from 1/2 orange
1 - 2 tbsp plain or vanilla yoghurt (optional)
INSTRUCTIONS
Mix all the ingredients together and let it set for at least 15 minutes before serving, or overnight in the fridge. Add more liquid as needed.
Top with yoghurt, orange segments and chopped nuts/ berries (if using)
