A quick pickle to add to almost any savoury dish.

SLICING THE ONION
The easiest way is to use a mandolin for really thin slices, otherwise use a sharp knife to slice.
You can slice them into rings or half moons.
STORING
Keeping it sealed and in the fridge will help keep it 2 - 3 weeks.

FLAVOURES
If you want them spicy - add chilli flakes
If you want it sweeter - add more sugar
If you want a more traditional pickling spice flavour - add whole cloves, mustard seeds, peppercorns and bay leaves

QUICK PICKLED RED ONIONS
A quick red onion pickle to add to almost any savoury dish.
INGREDIENTS
1 red onion, thinly sliced
1/2 cup apple cider vinegar or white spirit vinegar
1 tbsp granular sugar or maple syrup
1 cup hot water
1 1/2 tsp salt
INSTRUCTIONS
Slice the onion as thin as possible and stuff it into a clean jar.
In a pouring jug or measuring jug mix the hot water and sugar and stir until the sugar has melted. Mix in the apple cider vinegar and salt.
Pour the mixture over the sliced onions. Press the onions down if required to make sure they are covered in the liquid. Let is sit for about an hour before adding them to your meals.
After the hour, seal the jar and keep it stored in the fridge. It should keep 2 - 3 weeks.
