Bobotie spiced vegan mince, served on bed of dreamy hummus and a side of flatbread. This is the dream dish.
Inspired by one of my favourite restaurants in Portugal, The Hummus Kitchen, this is my vegan take on their Mince Hummus Bowl.

VEGAN "MINCE"
Vegan friendly mince options are actually no longer hard to find. There are some brands, especially in the UK that are really good options. I used This isn't beef from This. The texture works well and it takes flavours really well.
Other options could be soy or sunflower mince. You might have to rehydrate them before cooking. I suggest reading the cooking instructions on the packaging first.
I find depending on the type or brand of vegan mince, you might have to adjust the amount of spices.
The one I used in this recipe has a rich "buttery" taste, therefor I needed to add a generous amount of spices.
If you don't have a vegan mince option available I suggest using lentils. I have posted a lentil boboties last year, which will make a fab option for this. In fact, I think I should give that a try next week.
Here is my lentil bobotie recipe if you want to try it.
THE SPICES
Being South African, I used Bobotie Spices which are used in in a minced Cape Malay Curry dish. It uses flavours of curry powder, warming ginger and turmeric. It is delicious and makes a wonderful combination with the creamy hummus.
MAKE IT SPICY
Although not traditional, you can add a few chili flakes if you want some spice.
HUMMUS
This is my favourite hummus recipe to use - Easy Homemade Hummus Recipe
However, for this dish I only used half the amount of lemon juice required in my hummus recipe, to keep the flavour a bit more earthy and not overpowering lemony.

TO SERVE
A side of pickled veg or a fresh tomato salad makes great accompaniment to the dish. The acidity compliments the richness from the hummus and fragrant spices from the mince really well.
Flatbread or pitas are perfect for this dish and recommended to scoop up all the deliciousness.

INSTRUCTIONS
Heat a pan. Add the olive oil and diced onions and fry on low for about 8 minutes. Stir occasionally to avoid burning.
Add the dried spices and try for another 2 - 3 minute, stirring constantly. Make sure it's on a low heat to avoid the spices from burning.
Add the tomato paste and fry for another minute before adding the vegan mince.
Fry until the mince is starting to get some caramelised colour before adding the stock and the chutney.
Cook for 10 minutes (or as per packaging instructions). Add more stock if needed. It should be somewhat saucy and not too dry.
Taste and adjust seasoning if needed.
Spread the hummus in a bowl or plate. Top with the spiced mince. Sprinkle with oregano, crushed black pepper and a drizzle of olive oil. Add a dollop of chutney if your heart desires.
Serve with a side of flatbreads and pickled vegetables (optional).
