Strawberries & Cream Overnight Oats

Sweet strawberries and a rich, creamy overnight oats. The classic strawberries and cream combination.

STRAWBERRIES
It's currently strawberry season and Wimbledon is starting in a few weeks time, which means it's time for Strawberries and cream. Strawberries are currently at their best and super sweet.
I love adding strawberries to the oats and serve the oats with additional strawberries. The strawberries I serve with the oats I chop into quarters (or smaller) and drizzle them with a bit of maple syrup. This will give it a similar effect as macerated strawberries. Delicious!
AND CREAM
No cream is used in this oats, however I used a vegan Greek-style yoghurt to make it extra creamy, rich and thick.
You could use a soy-based cream to make it extra creamy, but in my opinion the yoghurt is just perfect for this.
I used the Oatly Greek-style.

YOU WILL NEED
Rolled oats, gluten-free certified if needed
Almond milk
Vegan Greek-style yoghurt
Fresh strawberries
Maple syrup
and a pinch of salt
SWEET
Depending on the sweetness of the strawberries, you might want to adjust the amount of maple syrup you use.
A great alternative for the maple syrup is honey or agave syrup.
MAKE IT REFINED SUGAR-FREE
If you want to keep this fruit-sweetened only you can use a mashed banana as the sweetener in the oats.
ALTERNATIVES / ADDITIONAL
Substitute the Greek-style yoghurt with a vegan vanilla yoghurt
Make it high-protein by adding a scoop of vanilla protein powder to your oats. You might have to increase the almond milk quantity.

STRAWBERRIES AND CREAM OVERNIGHT OATS
Sweet strawberries and a rich, creamy overnight oats. The classic strawberries and cream combination.
TIME: 15 minutes, plus overnight
SERVES: 1
INGREDIENTS
40g rolled oats
60g Greek-style yoghurt
60ml almond or oat milk (or as needed)
about 3/4 cup fresh strawberries
about 1.5 tbsp maple syrup or honey
a pinch of salt
INSTRUCTIONS
The night before chop about 1/3 of the strawberries into small pieces. In a bowl or jar mix the oats, yoghurt, almond milk, the chopped strawberries and a pinch of salt. If the strawberries aren't sweet you can add 1 - 2 teaspoons of maple syrup. Let sit overnight.
In the morning, chop the rest of the strawberries and drizzle them with one tablespoon maple syrup. Let sit for about 10 minutes before spooning the strawberries on top of the oats.
