Tiramisu Chia Pudding

Also known as "chiamisu" in our home. Flavours of coffee, vanilla and a hint of almond, finished with a dusting of cacao. An easy, healthy dessert inspired by a tiramisu.


Enjoy as a dessert or an indulgent breakfast.



Tiramisu Chia Pudding


WHAT IS CHIA PUDDING

Chia pudding is made with chia seeds mixed with milk of choice (and sweetener of choice) and let set for an hour or so until a tapioca or gel-like texture. It should be nice and thick and not runny.


Chia seeds are full of important nutrients such as rich in antioxidants, protein and calcium and are an excellent source of omage-3 fatty acids.


Almost all the carbs in chia seeds are fiber, which means you will stay fuller for longer and will aid keeping your gut healthy.


Chia pudding is a good meal-prep option as it can keeps for about 4 days in the fridge,



INGREDIENTS TO MAKE THIS CHIA PUDDING
  • chia seeds

  • unsweetened almond or oat milk. Hazelnut will work well too. Alternatively use any milk you like

  • maple syrup

  • instant coffee

  • vanilla paste

  • dairy-free yoghurt

  • few drops almond extract

  • cacao powder

TIPS TO MAKING A GOOD CHIA PUDDING

  • The texture should be nice and thick and not liquidy. If the texture is too soft or runny, add more chia seeds and let it sit for another 20 - 30 min.

  • Give the chia pudding a good stir about 5 minutes after your initially mix together. This will help break up any clumps. Let it sit for 2 - 3 hours before serving.

  • Using plant-based milks such as almond, cashew or coconut milk will give the pudding a creamy consistency.

  • To make it even creamier add a few teaspoons of plant-based yoghurt.

TIRAMISU CHIA PUDDING

A super easy and healthy coconut & chocolate dessert made with only a few ingredients.

Inspired by the flavours of a tiramisu


Serves: 2

Time: 5 min, plus setting time



INGREDIENTS


FOR THE CHIA PUDDING

  • 4 tbsp chia seeds

  • 1 cup unsweetened almond or oat milk

  • 1 - 2 tbsp maple syrup (or to taste)

  • 2 heaped tsp instant coffee (or to taste)

  • 1/2 tsp vanilla paste


FOR THE YOGHURT

  • 3 - 4 tbsp dairy-free yoghurt

  • 1 tbsp maple syrup

  • few drops almond extract


TO FINISH

  • Cacao powder for dusting

  • Chocolate shavings



INSTRUCTIONS

  1. Start by mixing the chia pudding ingredients in a bowl. Let it sit for 1 minute before stirring it again.

  2. Let the mixture sit in the fridge for 2 - 3 hours.

  3. For the yoghurt mixture add all the ingredients and set aside until needed.

  4. Divide the chia pudding between two jars/bowl and top with the yoghurt mixture. OR add the chia pudding and yoghurt in layers.

  5. When ready to serve dust with cacao powder and chocolate shaving and enjoy!
