Tofu & Date Chocolate Pudding

Inspired by Jamie Oliver's new Tofu Chocolate Mousse recipe, the maple syrup is substituted with Medjool dates and cacao powder instead of the melted chocolate. This is probably the healthiest chocolate pudding.

I saw Jamie Oliver's Instagram last week post about a healthy chocolate mousse made with tofu, dates, cacao and orange zest. I could not find the quantities of what he uses anywhere., but I believe it is a recipe from his new cookbook which will be released shortly? I'm not too sure.
Either way, using this as inspiration and having made silken tofu chocolate mousse on many occasions, I just threw what felt like the right quantities together and the result was good. So here it is. My take on his recipe.
His recipe doesn't get almond milk, but due to the amount of cacao I add it needed that additional liquid to achieve the desired, smooth consistency.
YOU WILL NEED
Medjool dates
Cacao Powder
Silken Tofu
Sea salt
Almond milk or milk of choice

MEDJOOL DATES
I personally love using Medjool dates as they have a deep caramel flavour and their chewy texture is delicious. As the dates are blended I think you could probably use any dates. If the dates aren't soft I recommend pre-soaking the dates for a bit longer. Using soft dates will make the blending process easier and will result in a smoother consistency.
TOFU
I have not tried this recipe using a firm tofu. Silken tofu will certainly give it that smooth, creamy consistency that we want. If you are making this with a firm tofu you might have to add more almond milk as the firm tofu will have less moisture than silken tofu.

CACAO POWDER
I use cacao powder, instead of cocoa powder. An organic cacao powder is even better in my opinion.
EASY AS
Simply add all ingredients into a high-speed blender until it's completely smooth. Easy and simple!
SERVE WITH
Toasted hazelnuts or almonds
Fresh berries, such as raspberries, blueberries, blackberries, cherries or strawberries
Add a little bit of orange zest
Crumbed biscuits

HEALTHY TOFU + DATE CHOCOLATE PUDDING

SERVES 4
TIME 10 minutes
INGREDIENTS
300g silken tofu
150g Medjool dates
50g cacao powder
30ml - 50ml almond milk (adjust to your liking)
a pinch of sea salt
chopped, toasted hazelnuts, to serve
INSTUCTIONS
Pre-soak the Medjool dates in boiling water for about 5 minutes or longer if the dates are not soft.
Drain the dates and transfer them to a high-speed blender along with the rest of the ingredients.
Blend until completely smooth.
Spoon into a bowl or individual bowl/glasses.
Serve with toasted hazelnuts.
