A deconstructed sushi in a bowl. This Tofu Sushi Bowl is packed with flavours and textures.

IN THIS BOWL
Rice: sushi, black or wild rice
Cucumber
Radish
Avocado
Edamame
Carrot
Marinated Tofu
ALTERNATIVES OR ADDITIONAL OPTIONS
Add mango cubes
Pickle the cucumber or radish or keep them fresh
Substitute the tofu with tempeh
Substitute the rice with cauliflower rice
Substitute the radish with daikon
SERVE WITH
A few seaweed sheets. Scoop some ingredients from the bowl onto the seaweed and enjoy.
Wasabi for additional spice
Pickled ginger. Delicious!
MAKE IT GLUTEN-FREE
To make this gluten-free swap the soy sauce with tamari sauce.

MEAL PREP
You can prep everything in advance, but perhaps just keep the avocado for last minute to avoid it turning brown.
Pre-cook the rice and let it cool completely before storing in an airtight container in the fridge.
Pre-cook the edamame beans if needed.
Marinade the tofu, fry it and let it cool before storing in an airtight container in the fridge. Remember to keep the remaining marinade. Store that in the fridge too.
You can pre-slice or cut the raw vegetables.
OTHER NOURISHING BOWLS

TOFU SUSHI BOWL

SERVES 2
TIME about 25 minutes
INGREDIENTS
1 block firm tofu, cubed
1 cup cooked sushi or wild rice
1 large carrot, ribbons or julienned
5 - 6 radishes, sliced
1/2 large cucumber, sliced or julienned
1 small avocado, sliced or cubed
1 cup edamame beans
1 tbsp sesame seeds
FOR THE MARINADE
1 tbsp dark soy sauce
1 tbsp rice wine vinegar
1 clove garlic, crushed
1 tsp freshly grated ginger
1/2 tbsp maple syrup
1 tsp toasted sesame oil
1 tbsp sriracha sauce (or wasabi to taste)
1 - 2 tbsp water
INSTRUCTIONS
Make the marinate and add the tofu cubes. Mix well to coat evenly and set aside.
In the meantime cook the rice and prep the vegetables.
Heat a pan and add 1 tbsp sesame oil. Scoop the tofu out of the marinate, but reserve the marinate as the dressing. Add the marinated tofu and fry on each side for a few minutes.
To construct the bowl divide the rice, tofu and vegetables between the two bowls.
Drizzle with the remaining marinade and sprinkle with sesame seeds.
