Tomato & Cannellini Bean Salad

This fresh tomato and white bean salad is a wonderful summer meal, especially with a side of fresh crusty bread. Or enjoy this salad as a side dish to a hearty meal, such as a vegan lasagne or a good vegan Melanzane parmigiana.


The sweetness of the tomatoes and the creamy, nutty flavour of the beans combines well with the herbs and lemony dressing. So simple, but delicious!





Tomato & Cannellini Bean Salad


THE INGREDIENTS

TOMATOES

You can use any type of fresh tomato for this salad. I used a mixture of cherry tomatoes and plum tomatoes (from my grans garden).



CANNELLINI BEANS / WHITE BEANS

The cannellini beans are also known as white kidney beans or fazolia beans and can be substituted for

  • Butter beans (Lima)

  • Chickpeas (Garbanzo beans)

  • Red kidney beans

  • Borlotti beans

  • Black beans



ONION

I added sliced red onion to this salad, but yellow onion will work well too.



HERBS

I used fresh curly parsley (from my parents garden) and dried oregano in this salad.

Fresh basil will be delicious in this salad too.



THE DRESSING

The dressing is a simple mixture of olive oil, lemon juice, dried oregano and salt & pepper.

This salad is also high in antioxidants, a great source of vitamin C, potassium, vitamin K and many other health benefits. The beans are high in fiber and protein and may help support a healthy body weight and digestion.

OPTIONAL TO ADD

  • fresh cucumber is a delicious add-in. It gives that extra freshness and crunch.

  • vegan feta

  • cubed and toasted stale bread to make a simple Panzanella salad.

  • crispy tofu



Tomato & Cannellini Bean Salad


TOMATO & CANNELLINI BEAN SALAD


A fresh, flavourful salad made with tomato, creamy cannellini beans, fresh herbs and a lemony dressing.



Serves: 2 as a main, 4 as a side

Time: less than 10 min




INGREDIENTS

FOR THE SALAD
  • 1 can cannellini beans, rinsed and drained

  • 1/2 small red onion

  • 250g fresh tomatoes

  • 2 tbsp chopped, fresh parsley



FOR THE DRESSING
  • 3 tbsp extra-virgin olive oil

  • 3 tbsp fresh lemon juice

  • 1 clove garlic, crushed (optional)

  • 1/2 tsp dried oregano

  • salt & pepper to taste



INSTRUCTIONS

Mix all the dressing ingredients in a small bowl until well combined.

Chop the tomatoes and transfer into a bowl. Add the rest of the salad ingredients.

Pour over the dressing and mix well.

Taste and adjust seasoning as needed. Even better if you let the salad rest for about 30 minutes before serving. Enjoy!
