Vegan Bruschetta - 3 Ways

A delicious appetizer or snack - crispy toasted bread, with tomatoes and herbs. hummus and grilled aubergine and vegan camembert and spicy pickle.


It is new years eve and we are starting the celebrations with bruschetta (3 ways), olives, roasted nuts and blood orange mimosas. Delicious, fresh and easy!





Vegan Bruschetta - 3 ways


WHAT IS BRUSCHETTA?

Originated in Italy, it is an antipasto usually made with toasted bread, which is rubbed with fresh garlic and traditionally topped with tomatoes and herbs or simply drizzled with olive oil and sea salt.



HOW TO MAKE VEGAN BRUSCHETTA

These are super quick and easy to make.

Slice the bread and toast until golden and crispy. This can be done either in a toaster or under the grill in the oven, which is my preferred option.

Cut a fresh garlic clove in half and rub onto the warm, toasted bread for an extra layer of flavour. This step is optional, but highly recommended.

Top with your favourite toppings.



WHAT IS THE BEST BREAD TO USE?

Sourdough baguettes, Italian or French baguette, ciabatta or sourdough loaves work wonderful. Cheaper store-bought white or brown breads are too soft to use for this and can get soggy rather quickly. Therefor a bread that holds its shape works best for this.


For gluten-free option, use a gluten-free bread.


Today I used an olive sourdough loaf, which combined absolutely divine with the toppings we chose.

DELICIOUS TOPPING IDEAS

  • Chopped tomatoes and basil

  • Vegan cream cheese, chives, cucumber and pickled red onions

  • Vegan camembert style cheese with a spicy pickle or chutney

  • Hummus and grilled aubergine

  • Roasted bell peppers and balsamic

  • Smashed peas and mint

  • Grilled mushrooms and herbs



MAKE A MEAL

  • Serve with a big salad

  • Enjoy as a side of a risotto or pasta dish

VEGAN BRUSCHETTA - 3 WAYS

Makes: 6 - 8 slices



THE BASE

  • 6 - 8 slices of bread

  • 1 clove garlic


Toast the slices until golden, with crispy edges (or toasted to your liking)

Cut the garlic clove in half and rub it on the bread whilst it's still warm.

Top with toppings of your choice.



THE TOPPINGS

TOMATO & BASIL

  • chopped tomatoes

  • fresh basil

  • sea salt & black pepper

  • balsamic vinegar


Remove some of the seeds in the chopped tomatoes to avoid the bread to get too soggy.

Chop the basil and mix with the tomatoes.

Add a small drizzle of balsamic, season with salt and pepper and mix well.

Let it sit for about 15 minutes (optional step)

Add a spoonful on top of a slice.



HUMMUS & GRILLED AUBERGINE

  • hummus of choice, preferably homemade (recipe links above in post)

  • grilled aubergine from a jar.


Spread a generous layer of hummus onto the bread.

Remove the grilled aubergine from the jar and chop roughly.

Arrange the chopped aubergine on top of the hummus and season with salt & pepper.



VEGAN CAMEMBERT & SPICY PICKLE

  • vegan style camembert or similar, store-bought.

  • pickle or a spicy chutney


Cut the camembert cheese into slices and arrange on top of a slice. Finish with a little dollop of pickle or chutney on top.
