A crunchy salad of cucumber, lettuce, cabbage and avocado and a dressing made with fresh herbs, silken tofu and miso. Finished with toasted seeds for additional crunch.

MEAL PREP This soup is great for meal prep as you can make a big batch and simply reheat on the day for your lunch. I would not suggest pre-making the mushrooms though. Rather make them fresh on the day or serve without the mushrooms.
