Chocolate Covered Rice Cakes

Crispy rice cakes, coated in a decadent layer of (homemade) dark chocolate. Preferably with an added layer of peanut butter or finished with freeze dried strawberries. This healthier dessert is easy to make, including making the chocolate from scratch.

THE CHOCOLATE

My mom and I have recently experimented making chocolate from scratch. It was surprisingly easy to make.

If you don't have the time or opportunity to make your own you can always use a store-bought chocolate.

My personal preference is using a dark chocolate with 70 percent cacao or more


If you want to make your own chocolate you will need cacao butter, cacao and a liquid sweetener, such as maple syrup or honey.



THE RICE CAKE

Plain or even lightly salted rice cakes will be fine to use.



THE FILLING (optional)

Here you have many options. I love a layer of peanut butter as it combines so perfect with the dark chocolate. I would recommend using a peanut butter that doesn't have any added sugars or palm oils.


Other good options:

  • Almond butter or nut butter of choice

  • Banana slices

  • Chia jam, such as raspberry chia jam

SPRINKLE WITH

  • Freeze dried fruit, such as strawberries or raspberries

  • Crushed nuts, such as peanuts or hazelnuts

  • Toasted sesame seeds

  • Cacao nibs

  • Toasted buckwheat

  • Sea salt flakes

  • Perfect to make on your meal prep days. Simply store them in a cool area in an airtight container.

  • Simple to make and only require a handful of ingredients.

CHOCOLATE RICE CAKES

Time: 10 minutes



INGREDIENTS

  • 6 Rice cakes

  • About 100g dark chocolate, homemade or store-bought


OPTIONAL
  • Peanut butter

  • Freeze dried strawberries



INSTRUCTIONS

FOR PEANUT BUTTER RICE CAKES

  1. Melt the chocolate in the microwave in 10 second intervals until it is runny, but don't overheat. Set aside.

  2. Spread each rice cake with about half a tablespoon* peanut butter before dipping the rice cake (peanut butter side) into the melted chocolate. * Adjust to taste.

  3. Place the rice cake on a plate (chocolate side up) and let it sit in a cool area or fridge until the chocolate is set.



FOR STRAWBERRY RICE CAKES

  1. Melt the chocolate and set aside.

  2. Dip one side of the rice cake in the melted chocolate.

  3. Place the rice cake on a plate and sprinkle with freeze dried strawberries. let the rice cakes sit in a cool area or fridge until the chocolate has set.
