Rich, coconutty, zingy and chocolaty. This vegan breakfast is indulgent, high in protein and actually healthy.

Imagine mixing the classic chocolate - orange combination with a bounty chocolate bar....

There’s nothing quite like a chocolatey oats to start off the day! Chocolate & orange is one of my absolute favourite flavour combination and with the addition of the coconut and the chocolate protein powder it takes it to another level.

These overnight oats are amazing for so many reasons. One of them being the fact that they literally take 5 minutes to make.

Make a batch of this the night before and you have yourself a quick and easy on-the-go breakfast which is not only high in protein, but also healthy.

The combination of fiber, protein, healthy fats and complex carbohydrates provides you with energy to fuel you all morning long.

This breakfast is

  • chocolaty

  • coconutty

  • zingy

  • citrusy

  • sweet

  • rich

  • super indulgent

  • refined sugar-free

  • fruit sweetened only

  • high in protein, if using protein powder

  • gluten-free option

  • good source of fibre

  • packed with antioxidants

  • vegan

  • and healthy

  • quick & easy to make

Alternatives & recommendations

  • You can substitute the mandarin with fresh orange

  • For a gluten-free option, make sure to use a gluten-free certified oats

  • I recommend using an unsweetened cacao powder to keep it refined-sugar free

  • For a nut-free version, omit the nut-butter or substitute with a seed butter.

  • After removing the mandarin segments, I love squeezing what is left of the juice in the fruit (or skin) over my breakfast.

  • If you are not a fan of banana, omit or use maple syrup to sweeten the breakfast.

  • If you don't have protein powder, simply omit.

Will this breakfast keep?

Yes, it will keep in the fridge in an airtight container for 2 - 3 days.

COCONUT, MANDARIN & CHOCOLATE PROTEIN OATS

Imagine mixing the classic chocolate - orange combination with a bounty chocolate bar.....

This vegan breakfast is indulgent, high in protein and actually healthy.

Serves: 2

Time: 5 min, plus overnight soaking

INGREDIENTS

  • 80g rolled oats*

  • 1 tbsp raw cacao powder**

  • 1 scoop vegan chocolate powder

  • juice from 1 mandarin

  • segments from 1 mandarin

  • 1 tbsp cacao nibs (optional)

  • generous pinch of salt ***

  • 1 cup or more almond milk (or milk of choice)

  • 1 tbsp desiccated coconut

  • 1 mashed banana, for sweetness

Optional to serve:

  • 1 tbsp nut butter of choice

  • Segments from 1 mandarin

  • homemade chocolate granola

  • coconut chips

INSTRUCTIONS

  1. Add all the ingredients into a container and let soak overnight in the fridge.

  2. In the morning give a stir to see it if needs more almond milk. Add as required.

  3. Serve with mandarin segments, a dollop of nut butter, coconut chips and a sprinkle with homemade chocolate granola and enjoy!

NOTES

* for gluten-free use a gluten-free certified oats

** for sugar-free version make sure to use cacao powder instead of cocoa powder. Cocoa powder often has added sugars.

*** you can omit, but I recommend adding as it intensifies the flavours and will make it taste even more chocolaty.
