Making chocolate from scratch is so much easier than you might think. With only 4 ingredients, you can make your own to use for any dessert you like.

YOU WILL NEED A GOOD QUALITY
Cacao butter
Cacao powder
Maple syrup or liquid sweetener of choice
Fine sea salt
ADD-IN IDEAS
Freeze dried berries
Roasted nuts, such as hazelnuts or almonds
Finish with a sprinkle of sea salt flakes

MY FAVOURITE WAYS TO USE THIS HOMEMADE CHOCOLATE
Chocolate & peanut butter covered rice cakes
Date bark
Nut butter stuffed dates, coated in dark chocolate
Vegan brownies
Dipping homemade Magum style ice creams in the dark chocolate
Chocolate covered nuts or coffee beans
DIY chocolate slabs
VERY IMPORTANT TIP!
Don't make or work with chocolate when it's raining or a high humidity.
High humidity can affect the taste, texture and the quality of the chocolate. Example: It can affect the chocolate surface as it dissolves sugar crystals which can lead to a white powdery coating, called sugar bloom. This is due to the dissolved sugars re-crystallizing as they chocolate dries. It may also affect the shelf-life of the chocolate.

HOMEMADE DARK CHOCOLATE
Making chocolate from scratch is so much easier than you might think. With only 4 ingredients, you can make your own to use for any dessert you like.
INGREDIENTS
100g Cacao butter
50g Cacao powder
70g Maple syrup or liquid sweetener of choice
a generous pinch of fine sea salt
vanilla beans or paste (optional)
INSTRUCTIONS
Melt the cacao butter in a bowl.
Add the cacao powder, salt and maple syrup to the melted cacao butter and stir (or whisk) until completely smooth.
Use the chocolate as desired for dipping or coating. Or transfer to your chocolate mould(s) and place in the fridge or a cool area until the chocolate is set and solid.
If require, you can reheat the chocolate in the microwave for a few seconds.
