Nutty, crunchy granola with macadamia nuts and coconut. Easy to make from scratch and perfect for breakfast or snacking.



Macadamia Granola


This granola is not only easy to make, but it's also vegan friendly and can be made gluten-free.


YOU WILL NEED

  • Rolled oats, gluten-free certified if needed

  • Raw Macadamia nuts

  • Linseeds

  • Sunflower seeds

  • Maple syrup, pure

  • Coconut oil, preferably organic

  • Coconut chips

  • a pinch of sea salt

ALTERNATIVE OPTIONS

Macadamia nuts are not easily available in the UK. You can substitute this for cashews or almonds

Add pumpkin seeds

Replace the maple syrup with honey or a vegan honey alternative

Add dried fruit such as cranberries.



ENJOY WITH

Your favourite yoghurt, I love using an oat or soy based yoghurt

Fresh berries, such as seasonal strawberries or raspberries.

Homemade or store-bought nut-based milk

Sprinkle over your smoothie bowls

Sprinkle over oven-baked pears, such as this recipe.




Macadamia Granola Recipe


GOLDEN BROWN

Please note that ovens vary. I use a fan oven and had mine in the oven for about 18 minutes at 160C. I recommend checking after 10 minutes to make sure it's not burning.

Stir after 10 minutes to ensure an even toasting.


I added toasted coconut chips once the granola was done. If you don't have toasted coconut chips you can always add yours to the granola for the last few minutes in the oven. Just make sure they don't burn.

MACADAMIA GRANOLA

Nutty, crunchy granola with macadamia nuts and coconut. Easy to make from scratch and perfect for breakfast or snacking.


TIME 30 minutes

SERVES 4



INGREDIENTS

  • 160g rolled oats, gluten-free if required

  • 80g raw macadamia nuts, roughly chopped

  • 30g coconut oil, melted

  • 45g maple syrup

  • 15g sunflower seeds

  • 1 tsp vanilla extract

  • a pinch of sea salt

  • 3 tbsp linseeds

  • 3/4 cup toasted coconut chips



INSTRUCTIONS

  1. Preheat the oven to 160C fan or 180C and prepare a baking tray.

  2. In a small bowl mix the melted coconut oil, maple syrup, vanilla and sea salt.

  3. In a larger mixing bowl, mix all the oats, nuts, linseeds and wet ingredients. Don't add the toasted coconut chips.

  4. Mix well. Spread out evenly on the baking tray.

  5. Bake in the oven for about 18 - 20 minutes or until golden to your liking.

  6. Stir halfway through if needed to ensure an even toasting.

  7. Remove from the oven and add the toasted coconut chips.

  8. Let cool completely before storing in an airtight container.
