Matcha & Chocolate Chia Pudding

Rich and chocolaty chia pudding, paired with the earthy, slightly bitter matcha is so good. My latest flavour combo obsession. Seriously delish. I have to confess I've been eating this every day for the past few weeks.





Matcha and Chocolate Chia Pudding


THE MATCHA LAYER

A creamy, vanilla flavoured matcha. The combination of vanilla and matcha itself is already absolutely delicious. I add a generous teaspoon of matcha powder to my yoghurt, but you can adjust this to your liking.

Make sure to use a good quality matcha powder.

Let's talk about adding chia seeds to this layer. I have made this adding chia seeds and also on numerous occasions without the chia seeds. That is up to you. If you are using a thick yoghurt you don't really need the chia seeds to thicken. However, if you are using a yoghurt with a runny consistency it will help thicken the mixture.



THE CHOCOLATE LAYER

This is a simple mixture of cacao, chia seeds, protein powder, maple syrup and almond milk. I add about 2 teaspoons of maple syrup, but you can adjust the sweetness to your liking.

If you don't have a chocolate protein powder you can just add more cacao powder.





YOU WILL NEED

  • Chia seeds

  • Almond milk or milk of choice

  • Cacao powder, ideally organic

  • Chocolate protein powder (optional), unsweetened

  • a pinch of salt

  • Plain (plant-based) yoghurt, unsweetened

  • Vanilla bean paste or vanilla extract

  • A good quality matcha powder

  • it's refined sugar free (of course depending on the yoghurt and protein powder you are using

THE CONSISTENCY

The longer it sits, the thicker it will get. When mixing this pudding it will be very runny, but this will change as the chia seeds absorb the liquid and swell. If you do find the consistency is too thick for you (after it has rested) you can always add a bit more liquid.



HOW LONG DOES IT NEED TO REST

I would say at least 30 minutes, but ideally longer. The longer it sits, the more the chia seeds absorb the liquid and creates a thicker consistency. This makes this dessert great for meal prepping.



BREAKFAST OR DESSERT

Why should there be rules. You can have this for breakfast or as a dessert.

TIME: Less than 10 minutes

RESTING TIME: At least 30 minutes



INGREDIENTS

FOR THE CHOCOLATE CHIA PUDDING

  • 2 and 1/2 tbsp chia seeds

  • 1 heaped teaspoon cacao powder

  • 1 teaspoon chocolate protein powder (or more cacao)

  • 2 tsp maple syrup (adjust to taste)

  • 1/2 cup almond milk or milk of choice

  • a pinch of sea salt



FOR THE MATCHA CHIA PUDDING

  • 1 tbsp chia seeds (optional)

  • 1/4 - 1/3 cup plant-based yoghurt (plain and unsweetened)

  • 1 tsp vanilla extract

  • 1 tsp maple syrup (adjust to taste)

  • 1 tsp matcha powder (adjust to taste)


TO SERVE (Optional)

  • Dark chocolate shavings or cacao nibs



INSTRUCTIONS

In a jar or bowl mix all the chocolate chia pudding ingredients until well mixed and no cacao powder lumps are left. Cover and set aside for at least 30 minutes to allow the seeds soak up the liquid. The longer it sits, the thicker the texture will get.

In another bowl mix all the matcha pudding ingredients and set aside.

Once ready spoon the matcha pudding on top of the chocolate chia pudding.

If desired sprinkle with dark chocolate shavings or caca nibs.
