Mocha Chia Pudding

Super creamy, chocolaty and coffee infused chia pudding or snack. A healthy, indulgent mocha flavoured dessert which is a great option for days when you feel like a sweet treat, but want to keep it healthier. This pudding is also dairy-free and gluten-free.

PREPPING
Seven ingredients and one bowl, this dessert only needs a few minutes prep and a bit of time to set (at least 15 minutes). This is a great dessert to make on your meal prep days. Make a few batches and store them in the fridge over the next few days, ready for when you feel like a sweet treat.
HEALTHY DESSERT
The main ingredient in this healthy dessert are the chia seeds. High in antioxidants, healthy omega-3 fatty acids and fibre, this dessert will keep you feel full for longer.
Chia seeds can help improve digestions and might even assist with weight management.
DESSERT FOR BREAKFAST
This can also be enjoyed as a Breakfast. Add a few fresh berries for an additional nutrition boost.

YOU WILL NEED
Chia seed
Cacao powder
Plant yoghurt, plain or vanilla
Espresso/ Instant coffee
Almond milk or milk of choice
Maple syrup or liquid sweetener
a pinch of salt

COFFEE INFUSED
I prefer using an espresso shot, but you can also dissolve instant coffee in a bit of boiling water or add it directly to the almond milk.
MAKE IT HIGH-PROTEIN
You can easily replace the cacao powder (or some of it) with chocolate protein powder. Depending on the brand you use, just be aware if your protein powder is sweetened you might want to reduce the amount of maple syrup you add. If you reduce the maple syrup you might want to increase the almond milk amount.
SWEET
Also, depending on the yoghurt you use you might want to adjust the amount of maple syrup you use.
If using a sweetened or vanilla yoghurt, you might want to reduce omit the maple syrup amount.

TIME: 5 minutes, plus time to set
SERVES: 1 - 2
INGREDIENTS
100g plain or vanilla dairy-free yoghurt (Unsweetened)
25g maple syrup
1 shot espresso
20g cacao powder
20g chia seeds
30g almond milk
a pinch of salt (optional)
1/2 tsp vanilla extract (optional)
TO SERVE
About 3 tbsp plain or vanilla dairy-free yoghurt
Chocolate shavings or cacao powder for dusting
INSTRUCTIONS
In a small bowl or jar, mix the yoghurt, maple syrup, espresso, almond milk and the cacao powder until completely smooth. Add more almond milk if needed.
Next, add the chia seeds and mix until well combined. Let is set for at least 15 minutes to thicken.
To serve, add a layer of yoghurt, followed by a dusting of cacao powder or chocolate shavings.
