Stovetop Matcha Granola

Coconutty, vanilla and matcha flavours, in granola format. A quick batch made in a pan on the stove top. A fresh batch ready in less than 15 minutes.

Not only am I obsessed with Matcha at the moment, but I love that this is such a quick and easy recipe to make.
WHAT IS MATCHA?
You probably are familiar with matcha, but if not... Matcha is a vibrant green powder made from specifically grown green tea leaves. It provides a calm, energy boost and has powerful antioxidants. It is also good for heart health and brain functions.
It has an earthy, slightly sweet green tea taste with notes of spinach or cut-grass and a pleasant bitterness.
QUALTIY MATTERS
Make sure to use a good quality matcha. The quality can effect the taste. Matcha of a poorer quality can often taste very bitter.
QUICK BATCH
This is especially a great recipe if you don't have granola but feel like having a bowl for breakfast.
This recipe makes either 2 small portions - e.g. if you want to sprinkle it over your yoghurt bowls
OR it makes one portion if you want to enjoy it will your milk of choice.
YOU WILL NEED
A pan and stove top
Rolled oats
Macadamia or coconut oil
Desiccated coconut (optional)
A good quality matcha powder
Vanilla extract or vanilla paste
Maple syrup or honey
Chia seeds
A pinch of salt to balance and enhance the flavours
and 15 minutes.
ENJOY WITH
your favourite plain (plant-based) yoghurt, hempseeds and a homemade blueberry chia jam.
If you don't want the chia jam you can add fresh berries, fresh mango pieces or banana slices.
Serve with oat milk and fresh berries.
IF YOU LIKE IT SWEET
You can always add a little bit more maple syrup or honey. However, this will make the granola more sticky. You might want to add more desiccated coconut or chia seeds to help make it less sticky.

MATCHA PAN GRANOLA
Coconutty, vanilla and matcha flavours, in granola format. A quick, fresh batch Matcha Granola, ready for breakfast in less than 15 minutes.
TIME: less than 15 minutes
SERVES: 2 small portions (perfect for yoghurt bowls) or one healthy portion
INGREDIENTS
1/3 cup (about 40g) rolled oats
1 tsp macadamia or coconut oil
1 - 2 tsp desiccated coconut (optional)
1/2 tsp good quality matcha powder
1/4 tsp vanilla extract or vanilla paste
1 tbsp maple syrup or honey
1 tsp chia seeds
A pinch of salt
INSTRUCTIONS
Heat a pan on medium heat. Add the rolled oats and toast the oats (without oil) until it's lightly golden and fragrant.
Add the desiccated coconut and toast for a few more minutes. Stir ever so often to avoid burning the coconut.
Reduce the heat and add the macadamia oil, 1/2 tbsp maple syrup, vanilla and salt. Stir well to coat all-over.
Sprinkle over the matcha powder and mix to coat evenly. Add the rest of the maple syrup and chia seeds, mix again and toast for another 3 - 4 minutes.
Remove from the heat.
Let it cool for a few minutes before adding it to your yoghurt bowl or enjoy it with oat milk and fresh berries.
