Strawberry and Matcha, I never thought these flavours are such a beautiful combination. Inspired by the viral Strawberry Matcha latte, this pretty chia pudding version is an absolute delight.

REALLY THE PREFECT AFTERNOON SNACK

It's delicious, refreshing and creamy. It's also packed with antioxidants, protein and fiber. The strawberries offer a sweet nutrition boost, whilst the matcha gives an energy boost.

YOU WILL NEED

  • A good quality Matcha Powder

  • Strawberries, fresh or frozen

  • Chia Seeds

  • Almond milk or milk of choice

  • Dairy-free yoghurt

  • Maple syrup

  • Vanilla



Strawberry Matcha Chia Pudding Recipe


VARIATIONS

Add a scoop of vanilla protein powder or a tablespoon of hemp seeds for a protein boost.

Swap the strawberry from fresh or frozen mango

Make it a breakfast and add a bit or granola, more fruit and seeds/nuts



STRAWBERRY LAYER

For the strawberry layer you can either blend the strawberries and almond milk to make a strawberry milk or you can mash the strawberries in the almond milk for a few strawberry pieces.

I used fresh strawberries as they are currently in season, however you can also use frozen strawberries.

STRAWBERRY MATCHA CHIA PUDDING

SERVES 2

TIME about 15 minutes plus setting time



INGREDIENTS

FOR THE MATCHA LAYER

  • 20g chia seeds

  • 80g Greek-style dairy-free yoghurt

  • 60ml almond milk or milk of choice

  • 1 tsp vanilla extract

  • 1/2 tbsp maple syrup

  • 1 tsp matcha powder



FOR THE STRAWBERRY LAYER

  • 20g chia seeds

  • 80g Greek-style dairy-free yoghurt

  • 60ml almond milk or milk of choice

  • 1 tsp vanilla extract

  • 1/2 tbsp maple syrup

  • 1 cup chopped strawberries



OPTIONAL

  • 2-3 tbsp yoghurt to serve



INSTRUCTIONS

For the matcha layer: Mix all the matcha ingredients together and set aside.

For the strawberry layer either make a strawberry milk by blending the yoghurt, milk, vanilla, maple syrup and half the strawberries until smooth. Mix with the chia seeds and set aside. OR mash half the strawberries and mix them in with the rest of the strawberry layer ingredients. Set aside to thicken.

Divide both puddings between two bowls/ jars by creating layers. Spoon over additional yoghurt (optional) and top with the remaining chopped strawberries.
