Raspberry & Cacao Overnight Oats

Rich, bitter dark chocolate flavour with bursts of the juicy, tart raspberries. A deliciously rich and indulgent breakfast flavour combination, but yet it's healthy.

YOU WILL NEED
Old-fashioned rolled oats. Use gluten-free if required.
Unsweetened almond or macadamia milk
A dairy-free yoghurt. Unsweetened and plain.
A good quality cacao powder
a generous pinch of pink salt
A sweetener of choice: 1 small banana, mashed or 1 tbsp maple syrup
Fresh or frozen raspberries
Chia seeds and/ or Hemp seeds
RASPBERRIES
Fresh or frozen? Okay, I know fresh raspberries are not available or affordable all year long. But not to worry, I find frozen raspberries work very well in this recipe too. So feel free to use either.
If you are using fresh raspberries in the overnight oats I recommend given them a light mashing. It is optional but it will give it a lovely jammy texture.
If you are using frozen ones simple add them frozen to the oats mixture. They will thaw overnight in the oats and will release it's juices... exactly what you want.
SWEETENED
How you want to sweeten your breakfast is up to you.
For a fruit sweetened version I love adding a small mashed banana. This adds natural sweetness and creaminess.
If you don't like banana you can add a drizzle of maple syrup or honey.
Or you can enjoy the breakfast as is it with the sweetness from the raspberries.
ADDITIONAL TO ADD
If your goal is maximum protein then you can add a scoop of protein powder. If you are using a chocolate flavoured protein powder you can also use that instead of cacao powder. Another option would be to add both the cacao and the protein powder to make it extra chocolaty - You may however need to add more milk.
LET'S TALK CONSISTENCY
Everyone might like their oats a different way. If you like your oats a bit more runny I recommend adding more milk in the morning. Remember that the oats will soak overnight and will therefor get a thicker consistency.
I suggest making this and adjusting the ratios to your liking.
If you are adding chia seeds just remember they do absorb liquids too and you might want to add more milk.

RASBPERRY CACAO OVERNIGHT OATS

Time: 10 minutes, plus overnight
INGREDIENTS
FOR THE OVERNIGHT OATS
80g rolled oats
1 cup almond or macadamia milk (add more if desired)
2 tbsp (dairy-free) plain yoghurt
20g cacao powder
a generous pinch of salt
Sweetener of choice: 1 small, mashed banana or 1 tbsp maple syrup
1/2 cup fresh (roughly mashed) or frozen raspberries
1 tbsp almond butter (optional)
1/2 tbsp chia seeds (optional)
1/2 tbsp hemp seeds (optional)
TO SERVE
Fresh or frozen raspberries
INSTRUCTIONS
For the oats mix all the ingredients until well combined. Cover and place in the fridge overnight.
In the morning, stir and add more milk if desired.
Divide between 2 bowls or jars and serve with more raspberries.
