Rice Paper Spring Rolls with Peanut Sauce

Fresh, crunchy and a spicy peanut dipping sauce. Thee fresh rice paper spring rolls with a peanut sauce are the perfect meal on a warm sunny day This is a fun and delicious way to eat a variety of vegetables.

YOU WILL NEED

  • Rice Paper Sheets

  • Fresh vegetables of choice

  • Firm Tofu, plain or smoked

  • Sesame seeds (optional)


AND FOR THE PEANUT DIP

  • Peanut butter, smooth or crunchy

  • Soy Sauce

  • Chilli oil or chilli flakes

  • Lime juice

  • Maple syrup

  • Fresh Ginger

  • Garlic granules



THE VEGGIES

I love using a selection of different colours. Not only does it look pretty, but it offers a variety of nutrients.

I used carrots, red and white cabbage, cucumber, avocado and radish. Bell peppers are also delicious in these wraps. So vibrant!


This is a great way to use up any veg you have in your fridge





PEANUT BUTTER

I recommend using a peanut butter with minimal ingredients. Both crunchy or smooth will work. I am pro crunchy as I love the added crunch of peanut bits in the dip.

Avoid using a peanut butter with added oils (such as palm oil) or sugars. The type and quality of the peanut butter might affect the overall taste and consistency of the sauce. As an example if the peanut butter you are using has added sugar or a lot of added salt, you might want to adjust the maple syrup or amount of soy sauce you add. Also depending on the thickness of the peanut butter you might want to add water to the sauce if it's too thick.


Therefor make sure to taste the sauce and adjust to what tastes and feels right to your liking.



ADDITIONAL OPTIONS

  • Add Vermicelli rice noodles

  • Mango slices

  • Lettuce leaves

  • Fresh herbs such as mint or coriander leaves

  • Spring onion or fresh chives

  • Tender-stem broccolini or use any other veg you like.



FRYING PAN OPTIONAL

You don't have to fry the tofu, you can use smoked tofu or plain tofu as it is.

I decided to fry the tofu with a bit of soy sauce and toasted sesame oil to add extra flavour.



DOUBLE ROLL

Rice paper is delicate and can be difficult to work with. If you find the rice paper is too delicate to hold all the ingredients in place you can always wrap the roll in a second rice paper sheet.



MAKE IT GLUTEN-FREE

By substituting the soy sauce with tamari sauce.

RICE PAPER SPRING ROLLS

TIME: about 20 minutes

SERVES: 1 - 2



INGREDIENTS

  • 2 - 4 Rice Paper wraps

  • 1/2 block of extra firm tofu

  • about 1 cup fi1nely sliced or shredded red and/or white cabbage

  • 1 mediums sized carrot, batons or thinly sliced

  • 1/2 large avocado, sliced

  • 1 small cucumber, batons or thinly sliced

  • 2 - 3 radish, sliced

  • 1 - 2 tbsp soy sauce

  • 1 tsp toasted sesame oil


FOR THE SAUCE

  • 2 tbsp smooth or crunchy peanut butter

  • 1 tbsp light soy sauce*

  • 1 tbsp fresh lime juice.

  • 2 tsp maple syrup

  • 1 tsp fresh ginger, finely grated

  • 1/2 tsp garlic granules

  • crispy chilli oil or chilli flakes, to preference

  • sea salt (if required, to taste)



INSTRUCTIONS

  1. Start with the sauce by whisking all together until combined. Add a tablespoon or two water if the sauce is too thick. Taste and adjust the sauce as needed. E.g. more salt or lime juice if needed. * Adjust if using a salted or unsalted peanut butter. Set aside.

  2. Cut the tofu into strips or batons and fry them in the sesame oil and soy sauce until lightly golden. Set aside.

  3. Prepare your workstation and make sure all the vegetables are cut and ready.

  4. Dip a rice paper sheet in water until the start become translucent and soft, but not too soft. About 15 - 20 seconds Gently transfer it onto a flat plate or board (not wooden).

  5. Sprinkle with a few sesame seeds before adding the vegetables. Add layers of strips of vegetables, shredded cabbage and a layer of tofu strip into the centre of the sheet. Do not overfill.

  6. Gently fold the bottom half of the rice paper over, then fold the sides in and tightly roll it up. If required repeat with a second rice paper wrap.

  7. Repeat to make a second wrap.

  8. Serve with the dipping sauce.
