Pancakes are not only for Shrove Tuesdays.
These vegan-friendly matcha pancakes are made using @soaringfreesuperfoods matcha and are filled with vanilla (or coconut) yogurt and fresh mango pieces 👌🏻
You will want to make these as often as possible during mango season.

To make these I mixed 1 cup flour, 1 cup macadamia milk (or milk of choice), 1 tbsp sugar, a generous pinch of salt, 1 tbsp @soaringfreesuperfoods matcha powder. Whisk into a batter and ladle the batter into a hot pan. Swirl the pan to spread the batter into an even thickness circle. Fry on each side for 2-3 minutes. Add a dollop of vanilla or coconut yoghurt and a generous spoonful mango pieces. Fold and repeat with the rest. Dust with more matcha and sprinkle with hempseeds.

Healthy collagen boosting hot chocolate. The special ingredient is the @soaringfreesuperfoods Tremella Mushroom powder, which is known as a beauty mushroom.

To make mix 1 tsp Tremella powder, 1 tsp cacao powder, 1/2 tsp maca powder. Add a sweetener such honey or maple syrup (to preference). Pour over a bit of boiling water and stir to dissolve. Next, pour over hot or cold almond milk (or milk of choice). Mix well. Sprinkle with hempseeds and enjoy! Enjoy hot or iced.

Inspired by @jamieoliver healthy tofu chocolate mousse, swapping the usual maple syrup for medjool dates and the melted dark chocolate with cacao powder. Absolutely delicious!

This is my take, inspired by his recipe 😉

To make this I blended:
300g silken tofu
150g medjool dates (pre soaked in hot water to soften)
50g cacao powder
30ml Almond milk
Generous of sea salt

Serves 3-4

If there is one fruit salad still to make this summer it’s this Gorgeous Berry Salad! Seasonal berries with fresh mint and a sweet and tangy poppyseed dressing.

For the dressing I mix the juice and zest from half a lime, 1 tablespoon maple syrup or honey and 1 tbsp poppy seeds. Pour over the berries, add a handful fresh chopped mint, mix and let it sit for about 30 minutes before serving with yoghurt or vanilla ice cream.

Yoghurt filled, chocolate covered raspberries. Such a delicious and refreshing treat.
Make a big batch and keep them in the freezer for when you feel like a sweet treat, but still want to keep it a bit healthier.

FOR THE FILLING mix
35g Greek-style yogurt
10g @soaringfreesuperfoods mesquite powder
1 tbsp maple syrup (optional)
10 -12 large raspberries
Add the mixture to a piping bag (Or makeshift like I did using a ziplock bag) and fill each raspberry. Place the filled raspberries in the freezer until the yoghurt is set. Once set, melt about 60g (or more) dark chocolate and dip or coat each berry with the melted chocolate. Place them back in the freezer for a few minutes to set the chocolate. Store in a the freezer or fridge (for a softer filling texture).

Glowing Skin Acai Papaya Smoothie made with @soaringfreesuperfoods Acai Powder (gifted)

This superfoods smoothie is high in antioxidants and vitamins (especially C and A).

For a serving for 2-3, blend 2 small bananas, 2 cups fresh papaya pieces, 1 tbsp Acai powder, 1 cup milk of choice, ice cubes/ water as needed for the desired consistency.

Making the most of strawberry season, including this STRAWBERRIES & “CREAM” OATS breakfast.
Sweet strawberries with a rich, creamy overnight oats.

To make mix 40g rolled oats, 60g vegan Greek-style yogurt, 60ml almond milk, (1 tsp maple syrup optional) a pinch of salt and about 1/4 cup finely chopped strawberries. Let sit overnight. In the morning add more yogurt or milk if desired, for the preferred consistency. To serve mix 1.5 tbsp maple syrup with about 5 or 6 chopped strawberries. Spoon over the oats and enjoy!

This MOCHA CHIA PUDDING will be your new favourite chia pudding.
It’s rich, creamy, chocolatey and coffee infused. High in fibre, gluten-free, indulgent and healthy.

My mom and I created this recipe on our most recent holiday together. Check out our new page @cacao_coated and give us a follow 💛
Recipe below 👇 and on my blog!

Mocha Chia pudding recipe:
100g plain yoghurt unsweetened or vanilla
25g maple syrup
1 shot espresso (decaf)
20g cacao powder
20g chia seeds
30g almond milk
A small pinch of salt
Mix all the above until smooth and let sit for at least 15 minutes to thicken.
To serve top with a layer of yogurt (I used about 3 tbsp) and a dusting with cacao or chocolate shavings. Enjoy!

Making Chocolate & Peanut Butter covered Rice Cakes with HOMEMADE CHOCOLATE!

The chocolate is made with only 4 ingredients:

100g @soaringfreesuperfoods cacao butter
50g @soaringfreesuperfoods cacao powder
70 ml maple syrup
And a generous pinch of sea salt.

Melt the cacao butter. Add the cacao powder, maple syrup and salt and mix well. Use as desired (rice cakes, chocolate moulds, dipping ice cream, etc.) and let the chocolate set before enjoying!

All about the green! Here is my Green Goddess Salad for a nourishing, filling lunch or dinner 🌱

High in protein, thanks to the tofu
Healthy fats from the avocado and seeds/nuts
Nutrients from all the greens.

For the savoury crumbs I grated @this.uk superfoods block and fried in a bit of olive oil until crispy, before adding a splash of soy sauce and frying for a further minute.

For the sauce:
3- 4 spring onions
A block of silken tofu
30g fresh herbs (I used a mixture of chives, dill, parsley, coriander and basil)
1 tbsp nutritional yeast
1 tsp light miso paste
1 small avocado (or 1/2 large avo)
Juice from 1/2 large lemon
1 -2 cloves of garlic
Sea salt and crushed black pepper, add to taste.
Blend until completely smooth.
For the salad I used 1 baby gems, 1/4 small white cabbage and 1 diced cucumber. Mix all together with the sauce, sprinkle with seeds and superfoods crumbs. Enjoy!

Today was a gorgeous sunny day, so we spend most of the day in the fresh air. After a beautiful 12km walk the only thing that made the day even better is coming home to batch of these HEALTHIER BROWNIES, made with a secret ingredient. Well that, and my husband has just said he will be cooking tonight which means it will be an amazing dinner!

Despite appearances, these are in fact deliciously fudgy! The texture is due to the coconut flour I use in these 😉

So, the ingredients are:
Cacao powder, Maple syrup, coconut (or almond flour), coconut oil, almond butter, vanilla, a pinch of salt and the secret ingredient, sweet potato!
