Healthier Cookie Dough

Made healthier by using wholefoods and less sugar than most cookie dough. The secret ingredient? Chickpeas!

We all love eating a bit of raw cookie dough when baking cookies. Most recipes get sugar, some sort of fat (e.g. butter or oil), and even eggs (for my non-vegan friends). This recipe, however, get's all the delicious flavours, but none of the mentioned above.
WHAT IS IT MADE OF?
Cooked Chickpeas - this is the base of the dough
Maple Syrup/ Honey / Date syrup - as the sweetener
Almond Butter - this helps bind the ingredients and adds a (healthy) fat
Ground Almonds - for texture and flavour
Vanilla Extract - cookie dough needs vanilla extract
Mesquite Powder - for sweetness and flavour (Optional)
Salt - to balance the flavours
and finally, dark chocolate - to make this a choc chip inspired cookie dough
YOU WILL ALSO NEED
A blender or a food processor

READY IN 5
It's really easy and quick to make. Simply add all the ingredients, except the chocolate, and blend into a dough consistency. Stir in the chocolate and you are ready to start snacking.
LET'S TALK CHICKPEAS
Using chickpeas from a can or from a jar make a difference to the texture. I find depending on the brand and quality some chickpeas might be softer. Depending on the softness of the chickpeas you might want to add more ground almonds.
Also, if the chickpeas have been cooked with salt you might want to not add more salt. I recommend tasting a chickpea before adding to taste if it has already salt added.
ALTERNATIVE OPTIONS
You can replace the almond butter with peanut butter or nut-butter of your choice
Use desiccated coconut instead of ground almonds if you like
To make this recipe nut-free simply replace the ground almonds with coconut and almond butter with a seed butter or tahini.
Not a fan of dark chocolate? You can also use white or milk chocolate (make sure they are vegan-friendly, if required).
Add more crunch with a few chopped nuts, such as pecan or almonds
Add almond extract for an almond cookie taste
or a dusting of cinnamon
the Mesquite powder is optional, but you can also add maca powder or cacao.
MAKE A BATCH
and enjoy on your next movie date night or as an afternoon snack. Store any left-overs in an airtight container, in the fridge.

INGREDIENTS
170g cooked chickpeas (about half a can)
30g maple syrup or honey or date syrup
1 tsp vanilla extract
20g almond butter
20g ground almonds
1/2 tsp Mesquite Powder (optional)
a pinch of sea salt
20g dark chocolate (roughly chopped or chips)
INSTRUCTIONS
Drain the chickpeas, if still required. Add all the ingredients, except the chocolate, to a blender or food processor. Blend into a dough-like consistency. Make sure the chickpeas are smooth.
Stir in the chocolate pieces and it's ready!
