Pina Colada Chia Pudding

Sweet, fruity, coconutty and creamy. This Pina Colada inspired chia pudding is great for a hot summers day.

YOU WILL NEED
Fresh pineapple
Coconut milk (not canned) or milk of choice
Coconut yoghurt
Desiccated coconut
Chia seeds
Maple Syrup
Vanilla Extract (optional)
CARAMLISED PINEAPPLE
Depending on the sweetness of the pineapple, you can caramelise the pineapple by heating the pieces with maple syrup in a small pan or pot. Cooking for a few minutes until the pineapple pieces are soft and start to golden. This will add a lovely flavour to the chia pudding.
TOASTED COCONUT
To toast the desiccated coconut heat a pan on medium heat and add the coconut dry to the pan. Once the pan is hot lower the temperature to its lowest. Keep an eye on them as ones they start to change into a golden colour it will go quickly. Stir constantly for an even toast. Remember the pan stays hot for a while after you have removed it from the heat, so keep that in mind as it will keep toasting the coconut. I recommend removing it from the pan ones it's the desired toasted colour. Set aside to cool.
THE LAYERS
To create layers start with half the chia pudding mixture, followed by half the toasted coconut and half the pineapple pieces. Follow with the remaining chia pudding, toasted coconut and pineapple.

PINA COLADA CHIA PUDDING

TIME: About 15 min, plus time to set
INGREDIENTS
1/2 cup fresh pineapple finely cubed
1 - 2 tbsp maple syrup
20g chia seeds
80g coconut yoghurt
60g coconut milk (not canned) or almond milk
1/2 tsp vanilla extract
2 - 3 tbsp desiccated coconut, toasted
INSTRUCTIONS
OPTIONAL TO CARAMLISE THE PINEAPPLE. Heat the pineapple cubes with 1 tbsp maple syrup until they pieces are soft and caramelised. Set aside. I recommend this step if the pineapple is not very sweet.
In the meantime mix the chia seeds, yoghurt, coconut milk, vanilla and 1 tbsp maple syrup. Set aside to to thicken. Add more yoghurt or milk if the mixture is too thick to your liking.
To serve, create layers by spooning half of the chia seeds pudding, coconut and (fresh or caramelised) pineapple into a jar or bowl. Create a second layer with the remaining chia seeds pudding, coconut and pineapple. Enjoy!
