Summer Berry Salad Recipe


THE BERRIES

Berry Season is my favourite in the UK. Local cherries, Strawberries, Blueberries, Blackberries, Raspberries... they are at their best at the moment and super sweet. I used a combination of all the above, but feel free to use your favourites.



THE DRESSING

A delicious dressing made with only 3 ingredients. Fresh lime juice, maple syrup (or honey) and poppyseeds. I recommend amending the amount of maple syrup/ honey depending on the sweetness of the berries. Seasonal berries will most likely not require much maple syrup.



FRESH MINT

I highly recommended to not give this a skip as it adds a wonderful freshness and is especially delicious with the lime.





HEALTHY DESSERT

Berries make a great healthy dessert as they have many health benefits, including being high in antioxidants and high in fiber. The dressing is simple and made without processed sugars. As a sweetener you can use either honey or maple syrup.



LET IT SIT

for about 30 minutes before serving. This will allow the berries to release their natural juices and will give it time for the flavours to develop.

SERVE WITH

  • A dollop of dairy-free yoghurt

  • A scoop of vanilla ice cream (vegan)

  • Serve on your (vegan) French toast or pancakes

  • Spoon over your chia pudding

  • or with your smoothie bowl

  • just as it is.

OTHER FRUIT TO ADD

Fruit such as mango, papaya or kiwi will make a great addition to this salad.

Berries with mint and lime dressing


SUMMER BERRIES SALAD


Seasonal berries with with a zingy poppyseed dressing and fresh mint. Pure Summer in a bowl.


TIME: 10 min, plus resting time

SERVES: 2 - 3



INGREDIENTS

  • 3 cups berries of your choice, such as cherries, strawberries, blueberries, blackberries and raspberries

  • 1/2 cup freshly chopped mint leaves

  • Juice and zest from 1 lime

  • 1 - 2 tbsp honey or maple syrup

  • 1 tbsp poppy seeds



INSTRUCTIONS

Wash, cut or slice the berries if required. Transfer into a bowl and add the mint.

Make the dressing by whisking together the lime juice, honey or maple syrup and poppy seeds.

Pour over the berries and mix well. Set aside for 30 minutes before serving.
