Sweet, fruity and rich. This cherry and vanilla chia pudding is a deliciously healthy delight.


Cherry Compote Chia Pudding


CHERRIES

Cherry season is currently in full swing in the UK and are at their best. Juicy and sweet. If you don' have access to fresh cherries feel free to use frozen cherries as they work just as good in this recipe.


The cherries are turned into a quick compote, which will give you the option to create the beautiful swirl through the chia pudding.



THE SWIRL

Once you have made the compote let it cool for a bit before spooning it on top of the chia pudding. Fold the cherries in two or three times to keep that ripple or swirl effect. This will also give you random bursts of cherries whilst you eat the pudding


Alternatively you can mix it all together for a gorgeous pink coloured pudding.






MAKE IT SMOOTH

You always have the option to blend the chia pudding or the cherry compote if you prefer a smoother texture.



INGREDIENTS TO MAKE THIS CHIA PUDDING

  • Chia seeds

  • Greek-style dairy-free yoghurt

  • Almond milk

  • Vanilla extract

  • About 15 cherries

  • Maple syrup

CHERRY COMPOTE CHIA PUDDING


Sweet, fruity and rich. This cherry compote chia pudding is a delicious and healthy delight.


SERVES 1

TIME about 15 minutes plus setting time



INGREDIENTS

  • 20g chia seeds

  • 80g Greek-style dairy-free yoghurt

  • 60ml almond milk or milk of choice

  • 1 tsp vanilla extract

  • about 15 cherries, fresh or frozen

  • 1 tbsp maple syrup



INSTRUCTIONS

Pit the cherries (if required) and cut each into quarters. In a small pot add the cherries, vanilla extract and one tablespoon of maple syrup. Let simmer on low for about 10 - 12 minutes or until the fruit is soft and are breaking down into a juice. Add a splash of water if needed. Set aside to cool.

In the meantime make the chia pudding by mixing the chia seeds, yoghurt, almond milk and 1/2 tbsp maple syrup (optional. Let it set for at least 15 minutes. Add more milk or yoghurt if required.

Spoon the compote on top of the chia pudding or mix it in with the chia pudding for a pink colour.
