Mint Chocolate Chia Pudding

Inspired by the After Eight chocolates, this is my healthier chia pudding version. Rich chocolate chia pudding with a layer of minty yoghurt. Delicious!

AFTER EIGHT
After Eights chocolates will always bring up special memories for me as they remind me of my Grandmother. She always kept after eight chocolates in her cupboard and occasionally when no one else was around she would ask me to get us each a piece. The cooling, gooey minty filling with the bitter dark chocolate was a wonderful treat. It's been years since I have had an after eight. Mostly because they are not vegan.
This is my healthy pudding version....

WHAT MAKES IT HEALTHY?
The main ingredient in this pudding is the chia seeds. When mixed with a liquid they turn into a tapioca like texture. The seeds might be tiny in size but they are high in protein, antioxidants, omega-3 and high in fiber. Benefits include aiding a good gut health and improving digestion, good heart health, supports bone health and may improve blood sugar control.
THE LAYERS
I kept the chocolate chia pudding itself purely chocolate flavour and without the mint. The mint flavour is added only to the yoghurt as I don't want the mint to be too overpowering. I like the contrast of the fresh mint against the rich, slightly bitter chocolate flavour.

THE MINT
I used mint essence to get the mint flavour. Mint oil might be too potent so I would recommend using the mint essence. Start with a couple drops only. Taste and add more if desired until the minty flavour strength is good for you.
THE CHOCOLATE
To keep this healthy I didn't add any actual chocolate in this dessert. However, if you wish, you can always add a few chocolate chips to the chocolate chia pudding or finish with a few chocolate shavings on top.
I used a good quality cacao powder for the chia pudding.
YOU WILL NEED
Chia seeds
Cacao powder
Unsweetened Hazelnut milk or milk of choice
Plain dairy-free yoghurt
Maple Syrup
Mint Essence

MINT CHOCOLATE CHIA PUDDING
Inspired by the After Eight chocolates, this is my healthier chia pudding version. Rich chocolate chia pudding with a layer of minty yoghurt.
TIME: 5 minutes, plus time to set
SERVES: 1 - 2
INGREDIENTS
100g plain or vanilla dairy-free yoghurt (Unsweetened)
25g maple syrup
20g cacao powder
20g chia seeds
80g hazelnut milk, or more if needed
2 - 3 drops mint essence (adjust to your liking)
TO SERVE
About 3 tbsp plain or vanilla dairy-free yoghurt
few drops mint essence
1 tsp maple syrup
INSTRUCTIONS
In a small bowl or jar, mix the yoghurt, maple syrup, hazelnut milk and the cacao powder until completely smooth. Add more milk if needed.
Next, add the chia seeds and mix until well combined. Let is set for at least 15 minutes to thicken.
In another bowl mix the yoghurt and min essence and maple syrup (if using). Taste and add more min essence if desired. Spoon the yoghurt on top of the chocolate chia pudding.
